Roasted Sweet Garleek Bloody Mary

BLOODY MARY ASSEMBLY

  • 4½ ounces Bloody Mary mix (see below)

  • 1½ ounces vodka, tequila, or mezcal (optional) 

  • Ice

  • Garleek salt (see below)

  • One piece of fresh horseradish, peeled 

  • Garnishes: celery, lemon or lime wedge, and your favorite pickles or olives

  • In a cocktail shaker, add Bloody Mary mix, alcohol, and ice. Roll between shaker tins 4–5 times until cold.

  • For a non-alcoholic version, sub the alcohol with cold water.

  • Pour into a Collins glass rimmed with Garleek salt.

  • Garnish with celery, lemon or lime wedge, and your favorite pickles or olives.

  • Finish with freshly grated horseradish.

 


 

BLOODY MARY MIX

Ingredients (yields approx. 32 oz):

  • 1 28-ounce can whole peeled tomatoes (preferably La Valle)

  • 1¾ tablespoons lemon juice

  • 1¾ tablespoons Worcestershire sauce

  • 2¾ teaspoons soy sauce

  • 1 tablespoon + 1 teaspoon molasses

  • 2¾ teaspoons sriracha

  • 2¾ teaspoons Chipotle Tabasco 

  • ½ teaspoon ground black pepper

  • 2 teaspoons kosher salt 

  • 1½ tablespoons Sweet Garleek purée (see below)

Instructions:

  • Use a hand mill to crush canned tomatoes, removing thick pulp.

  • Add all remaining ingredients and blend with an immersion blender until smooth.

  • Taste and adjust for seasonings as needed.

  • If too thick, thin with a splash of water—especially if serving without alcohol. Alcohol will naturally loosen the mix.

  • Let sit for at least 1–2 hours before serving for best flavor.

 


 

SWEET GARLEEK PURÉE

Ingredients:

  • 6–8 Sweet Garleek stalks

  • Extra virgin olive oil 

  • Kosher salt 

  • Black pepper 

Instructions:

  • Preheat oven to the Broil setting.

  • Cut the Sweet Garleek stalks lengthwise and clean thoroughly.

  • Toss with extra virgin olive oil, salt, and pepper.

  • Arrange on a baking sheet and broil for about 15 minutes, turning every 5 minutes, until evenly charred.

  • Roughly chop into 2-inch pieces and blend with about 6 ounces of water until mostly smooth. Don’t worry if it’s not perfectly blended—you’ll adjust the consistency when you mix the final Bloody Mary.

 


 

GARLEEK SALT

Ingredients:

  • 10–12 Sweet Garleek stalks, green tops only, chopped into ¼" pieces

  • Kosher salt

Instructions:

  • Pat Garleek pieces dry and spread on a parchment-lined tray.

  • Set oven to Convection Bake at the lowest temp (ideally 150–170°F / 65–75°C).

  • Prop open the oven door slightly to release moisture.

  • Stir every 30–45 minutes until pieces are fully dry and crumble by hand. This should take about 2.5 to 3 hours.

  • Crush in a spice grinder or mortar & pestle (avoid turning into dust).

  • Mix 1:1 with kosher salt by volume.
