Carol Deppe, breeder of the Fast Lady Northern Southern Cowpea, brings us this uniquely delicious, productive dry bean. The “Beefy Bean” has—you guessed it—a delicious, rich and beefy flavor, with notes of miso, shoyu, and mushroom. Bred for organic systems, this grex population was intentionally left with diverse characteristics in order to increase its resilience and allow others to continue the work of seed saving and local adaptation. This population will exhibit various shades of light yellow, orange, dark browns and blacks, each with its own flavor.
