It’s insane how long a season I got out of Centercut (expertly bred by @mazlabseeds for @row7seeds). When zucchini and summer squash were falling left and right this summer to squash vine borers and powdery mildew, the only thing that could take out Centercut’s ever-reaching vines was a fall freeze.
Last week’s weather finally took care to kill the vines, and now I still have zucchini soup to prepare and freeze. This winter squash, bred from the heirloom #tromboncino to look and taste more like a summer squash, was my favorite garden addition this year. It grew up and filled out a giant A-frame trellis I built for it. It produced heavily, with little pest pressure or disease. And regular old summer squash and zucchini better watch out, because I found its texture and flavor to be superior too—less watery, it better holds up to many manner of preparation.

Center cut squash aka tromboncino are native to Italy. The young green squash are sweet, nutty and meaty. This is @row7seeds answer to the ‘ho-hum’ zucchini. It is denser and has less water content than a zucchini. We grew these for the first time this year and they were wildly successful. It has been simply cut, scored, salted and slowly cooked in olive oil unilaterally. Brushed with a black olive caramel and sauced with a confit garlic yogurt. Then garnished with olives that have been dehydrated to make a crumb, cultivated and wild herbs (bronze fennel, wood sorrel, oregano x2 & chicory).

I have 2 plants in my garden and I have to say it is one too many, bc they are so productive. I harvest 2 squashes every day.
I love them grilled or filled/baked. They aren’t as seedy or get as mushy as zucchini.
